Today I kegged the Toy Soldier (Vanilla & Oak) Stout fromwww.OntarioBeerKegs.com and I must say I am really happy with how it is coming along, I’m not normally the biggest fan of oaked beers but this is not overpowering. I would probably omit them next time brewing this recipe. The hydrometer sample I pulled had a nice vanilla and roast malt and slight chocolate, finishing with the oak just lingering on your tongue. It finished off fermenting with a Final Gravity (FG) 1.011 giving this stout a respectable ABV of about 5.4% and it has cleared very nicely, with a deep walnut color.
And Freyja Brau Porter (OXO Freyja Brau recipe by Happy Homebrewer.) has just been tapped and the first impression is good. We seem to have had a incomplete conversion of the mash however, so it is a little sweeter then intended but it still has a great malty backbone to round it out. This was my first brew day with a new mash tun and I had a few learning experiences with Duncan lol. All joking aside it is still a great porter and I look forward to brewing this again!
